The last few summers I’ve enjoyed picking up a habit my parents always have done. They plant a full garden along with herbs. I haven't tackled a full garden yet, but we hope to next year. However, I have planted some herbs. Part of it is just enjoying the fact that I have edible things growing out in my own back yard, but also I enjoy knowing that I can run out there…cut off some oregano or Cilantro and add it into a dish without a second thought! One of the many many things I LOVE about summer! I recently made a batch of this homemade corn and bean salsa. I got a recipe from a woman I work with…and it’s absolutely delicious!! Thanks Karla! I’m not sure I do the exact same thing she does, but after a few batches I have cultivated a version that my family loves!
2 Cans of sweet white corn
1 Can of black beans
6 fresh Roma tomatoes (or you can use diced tomatoes from a can, or a little of both)
2 or 3 good size sprigs of Cilantro (I used mine right off the patio this year…so yummy!!)
One half of a large red onion
3 or 4 limes – juiced
Garlic Salt and Cracked Pepper to taste (I like a lot so I use quite a bit)
You just mix all your ingredients together and let it sit overnight. Or if you are like me and Jer, you dive right in b/c you can’t wait to let it sit!!
