The bounty of my Dad's awesome Garden!

My Dad plants a garden every single summer...and I always look forward to his tomatoes and other deliciousness that comes about mid-summer.  This year was no exception!!  Between his zucchini, blackberries and tomatoes alone we had a summer full of homemade goodness!!

From the 3 zuchs and tomatoes below I created:

8 loaves of zucchini bread

Turkey sausage stuff zucchini with homemade tomato sauce

Zucchini lasagna

The bread was a synch and you don't need a ton to make it go a long way. I found a recipe that called for whole wheat flour and it did not disappoint!!

I also was able to make a couple large batches of homemade tomato sauce and also my corn and black bean salsa!!

Needless to say we had a summer full of delicious goodness thanks for my Dad and his labors of love slaving away in his garden!!  Thanks for sharing us and giving me lots of fun stuff to experiment with this summer!  Though I'm most definitely excited for and in the mode for fall goodness now, I already can't wait for next year's awesomeness to roll around :)
